Denis and Kathleen successfully operated the café by catering essentially for suppers after the city's theatres had closed – the business remained open on most nights until 3.00 am. The two lengthy rows of curtained booths separated by the long central row of tables created aisles that were referred to by customers as 'Flemington Straight'.
